The usual rules apply: No insulting comments about vegetarianism!  And use your common sense: no one here wants to hear about your steak.   Tongue

Me?  I have some fresh farmers market tomatoes and mozarella cheese just waiting to be paired with some basil from my own garden for my supper tonight.  Mmmm, caprese salad....

I know we mentioned this on Twitter-feeds, but I had the same thing this weekend.  I had some GIGANTIC tomatoes -- two of them were enough to make a whole bowl-full of salad!

Instead of slicing, I prefer to make mine using chunked tomatoes and mozarella, then I make a sort of dressing and let everything sit and meld for a little while.  This time, my dressing was olive oil, fresh basil from my garden (basil production is low this year, but it still tastes good!), some kosher salt, fresh ground black pepper, and just a little bit of basalmic vinegar.

So, so tasty.  I actually meant to bring the last of it for lunch today, but rushed out and forgot.  Cry

I actually wound up not having my salad on saturday.  The weekend's weather was just too hot to really work up much of an appetite, so saturday i munched on the cherry tomatoes i bought at the market.

But your comment reminded me that i'd meant to make salad caprese, so that's what i did over my lunch break.  Mmmmmmm, it's so delicious.  I threw in some onions, because i adore onions.  I thought i'd made a big enough salad that i'd have some for tomorrow's lunch, but, errr, that doesn't seem to be the case.   Wink

At the Richmond Zine Fest meeting the other nite i had a ridiculously huge Tempeh Philly wrap.  It was great and served with some nummy couscous.

We had stuffed and fried squash blossoms tonight.  I'd never had them before and always wondered what the big deal about squash blossoms was.  Well, today we got them in our CSA share and figured we might as well give it a whirl.

Oh.  My.  YUM.  We made the "squash blossoms stuffed with (goat) cheese and herbs (basil)" from pages 309-310 of the 75th anniversary edition (copyright 2006) of the Joy of Cooking.  Highly recommended if you like cheese and don't mind things that are lightly fried.

I only wish we'd had more than 7 blossoms.

Tonight we had a rare once-a-year treat: sunburst squash stuffed with a concoction of eggs, spinach, cheese (gruyere), and mushrooms (lobster).  We wind up having this only once a year in part because of the seasonality of the squash and in part because it takes about an hour to make (30 minutes prep time, 30 minute cook time).  But, oh my!  So worth it!!

This is the 1st time i've ever had lobster mushrooms, and they were extraordinarily tasty.  Andy didn't use the stems, so i'm saving those to experiment with making broth with them.

I made a gorgeous asparagus and mushroom risotto this evening. Complete with some horrendous amount of parmesan cheese and a lot of stirring. I feel all warm and autumnal. Om nom nom.

I tried making my usual parmesan/romano cheese sauce but swapping rice milk for cow milk, and it wasn't such a success.  "Rice milk can easily replace cow milk" my ass.  Guess i'll have to find a rice milk -specific recipe for my cheese sauces, because this pea & pasta dish just is not nearly as tasty as i was hoping it would be.
